Fried chicken sticks with rice

The Malagasy people love deep-fried food. No matter which meal of the day, be sure you can get something deep-fried on the streets. An especially tasty variation, made by our cook Eric, are these chicken sticks in the deep-fried spicy dough. Of course, the Malagasy way you should prefer to add rice to this meal (here we used red Malagasy rice instead of white)  and maybe a side dish such as  Lasaray voatabia. We also added a simple sauce to this recipe since the often used Cassava enriched water for rice in Madagascar is not really tasty.

Ingredients for 4 persons:

  •  500g chicken breast
  • Pepper, salt
  • 1 tablespoon sunflower oil
  • 55 ml oyster sauce
  • 150g rice flour
  • 250 ml water
  • 250g rice
  • 200ml chicken broth
  • some soy sauce
  • brown sugar
  • oil for deep-frying

And that’s how to do it:

Cut the chicken breast in small pieces. Sprinkle the meat evenly with black pepper and salt. Then add 1 TS sunflower oil and the oyster sauce. Mix meat and marinade well. For the dough, mix water and flour and spice slightly with pepper and salt. The dough should get a similar consistency as crêpe dough, which means rather fluid but still able to stick on the meat. Spike all meat pieces on small skewers.

Heat up the oil in a pot. At the same time, put rice in another pot and cover with water. Let rice and water simmer until the desired consistency of rice is reached. Pull the chicken skewers through the dough, let too much dough drip off for some seconds, and give the skewer into the hot oil. Deep-fry until golden brown and crispy. For a sauce reduce chicken broth with some soy sauce, brown sugar, pepper and salt to your taste.

P.S.: Rice portions have been calculated for Europeans. If you invite a Malagasy friend, be sure to at least double the rice amount. 😉
